We did some work at around the time the server was reported slow a few days ago

Your fix appeared to be a server change. However we discovered that a handful of minor changes we made had reverted in our project.

However we now have another problem, we make changes to the Jobs table, and now every time we make a change we are getting 34!=31. I have seen this in views, but never in tables

Looks like the system thinks stuff is removed, but in actual fact they are still there.. or or the other way around

For the lost of data recently done, it is actually possible... I have reinstalled the whole server and migrated all datas.
" I changed the motor of the plane during the flight " without cutting the service.
I migrated all the datas, but it is possible to have lost some details during the propagation of the DNS (4 hours), because I didn't wanted to shut down all the website during this moment.
Only the builder was offline for this precise reason. Now if you have lost few changes, this is strange.

I tried to play with this table, and it works for me.

Do you mean "table fields" or "brick fields".

Can you try again and confirm me you still have this problem ?
Can you be more precise ?
This can happens sometimes when a field is "broken", due to a FK reference change, but I checked all in database, and your fields do not seems to be broken.
Do you encounter a JS problem in the firefox developer console ?

I saw it sometimes. It is due to a synchronisation problem between the PHP side, and the browser side (JS).
This is the reason why you are not allowed to open the builder in 2 different browser pages in the same time.

When it happens, you can also try a reordering of the list, sometimes, it solves the problem.
Normaly, it is not blocking bug. Was it blocking for you ?
