What I do not see, or even see mentioned, is how to open the generated files to modify them.

I click on them, I look around the interface, and although I see much mention of "Coding inside your component" in the forum, no one mentions how to edit a file.

It is not possible. Download created component and edit your files. Cook doesn't (yet) support editing of files within the project.

I don't believe it will be possible. With this option is it not possible to guarantee that downloaded component is correct.
Cook generate some PHP code and this code is correct (except possible bug's). With custom code is it not possible for Cook builder to check the code.
