- Standard joomla user OR
- A user record in your custom component. I mean, do you want to have to create a user-related record in your component for them to do stuff
...once the user is created create items...
?

I think that the best place to start is to keep looking around the builder... Work out what functionalities look interesting to you and what you'll need and create a dummy table and fields to experiment with each. Maybe even a bunch of projects for testing... Whilst you're experimenting, search the forum for your requirements - you'll find loads of help/tuts and so on to help you on your way. Good place to start with the forum
